Caramel Flan


1/2 vanilla pod
1.75 cup whipping cream
1/3 cup water
egg yolks 2 pcs.
sugar (cream) 7 Art. l.
sugar (for the caramel) 1 cup
1 pinch of salt
1 cup whole milk
eggs 3 pcs.


Flan – a popular dessert of French cuisine. The name comes from the French “flan” – it was a baked bowl that is filled with various fillings. He was known in Russia in the 19th century, but over time the word came to be called not only a classic dessert peculiar shape, but other cakes are more reminiscent of the structure of the souffle. Whatever it was, it is an interesting and original recipe caramel flan. This you will find in a restaurant. And so we are now prepare! For starters make caramel. Mix a cup of sugar and 1/3 cup of water and put on a slow fire. Stir until the sugar dissolves, then increase the heat. Boil 7-8 minutes, until the syrup has not been acquired wonderful amber color.
Quickly pour the candy into molds. You can use the cup. And immediately tilt each mold in different directions, to caramel covered edge.
Now cream! It must be prepared in parallel, or better – to advance to pour directly into the hot caramel. Mix cream, milk and salt in a pot with thick walls. Vanilla pod halves divided along, add the cream. Bring to a boil over medium heat. Remove from heat and let cool 30 minutes. Separately, beat the eggs, egg yolks and 7 tablespoons of sugar. Then add 1/4 cup cream to the mixture. Stir and add the whole egg mixture into the cream. Gently whisk not to get foam. Strain through a sieve to remove any possible lumps. This cream pour into candy molds, filling to the top. And they themselves set molds on a baking sheet or pan, drenched with boiling water so that the water reached the middle of the shapers.
Bake for 45 minutes at 175 degrees. Refrigerate for 2 hours at least. A better leave it on all night! And only then remove the flan from the molds. You can help yourself with a knife.
