Club Sandwich with turkey


Pancetta 6 pieces
6 pieces of white bread
25 g green salad
Tomato 1 piece
Chives 2 tablespoons
Turkey 175 g
Chopped parsley 1 teaspoon
White wine vinegar 1 tablespoon
Egg chicken 2 pieces
1 clove garlic
Dijon mustard 1 tablespoon
Olive oil 200ml
Salt to taste
Ground black pepper to taste


1. Preheat the grill. On the grill lay pancetta and fry for 3-4 minutes until crisp. Turn 1 again. Put on kitchen paper towel and pat dry.
2. To prepare the seasoning in a convenient container, pour the egg yolks, add the vinegar, mustard, chopped garlic, season to taste and stir. Add the olive oil, stirring occasionally. A minute later, you will notice that the mixture begins to thicken. Start actively pour oil, stirring constantly, but not too fast, because the mass may curl.
3. Fry the bread under the grill and spread the resulting seasoning. Divide the salad between two slices of bread, put sliced ​​tomatoes and a part finely chopped chives. Add seasoning to taste.
4. Top with slices of cooked turkey, cover with slices of bread buttered side up. Put the salad on top – crispy pancetta and sprinkle with chives. Cover with remaining slices of bread and press down gently. Cut each sandwich into four triangles, pierce with a toothpick, so as not to fall apart. Arrange on a serving dish, sprinkle with parsley.
