Crème soup of broccoli and blue cheese
Butter 20 g
Onions 2 heads
1 head broccoli
Milk 750 ml
Cream 250 ml
Blue cheese 100g
1 clove garlic
1. Melt the butter in a large heavy-bottomed saucepan and fry the onion until soft. Add the garlic and cook for another minute, then add the chopped broccoli and milk. Simmer 30 minutes.
2. Add more cream and blue cheese, season with salt and pepper. Cook for 10 minutes, pour into a blender and whip.
3. Serve with cream and slices of blue cheese.
