Crispy shrimp breaded in bread crumbs and Parmesan cheese
Shrimp medium or large. From small to bother not worth it.
a piece of dried white bread, crackers or ciabatta.
cilantro or parsley.
a handful of grated Parmesan cheese
zest of one lemon
salt and pepper
2 eggs and flour.
Dry bread in the oven. Crumble or crush in a mortar into crumbs. Stir in Parmesan and finely chopped cilantro, finely (or parsley), lemon zest. Season with salt and pepper.
Shrimp clean, remove the head. In large to remove the intestinal vein. These I do not take out, they are small. The ends of the tails can leave.
Shrimp roll in flour, shake off excess, dip in beaten egg and roll in breadcrumbs and parmesan crumbs out.
Fry in a mixture of butter and vegetable oil until crisp. If the breading was dry for a minute on each side quite enough.
Shrimp lay out on paper towels to glass excess oil.
Stir in a little olive oil and lemon juice and pour over the arugula.
