Garlic Bruschetta with tomatoes, red onion and basil
Cherry tomatoes 1 cup red
Yellow cherry tomatoes 1 cup
Olive oil 3 tablespoons
½ red onion head
Basil leaves 3 tablespoons
Balsamic vinegar 1.5 tablespoons
Focaccia 1 piece
1 clove garlic
1. In a small bowl, combine the diced tomatoes into halves, chopped onion, 3 tablespoons of olive oil, chopped basil and balsamic vinegar. Season with salt and pepper to taste.
2. Preheat the grill in the oven. Cut focaccia in half and place one half on a baking sheet, cut side up. Coat with olive oil and place under the grill for about 2 minutes until golden brown. Remove from the oven and quickly rub a clove of garlic. Cut into 4 pieces.
3. Top with the tomato mass, and serve.
