Excellent Spanish summer soup – quick and fresh alternative.
2 medium tomatoes
½ sweet pepper
1-2 cloves garlic
2-3 tablespoons olive oil
1 tbsp balsamic vinegar or sauce
Salt and freshly ground pepper to taste
1. Fold the chopped vegetables and garlic in a blender and grind until smooth.
2. Add the olive oil and balsamic vinegar (sauce).
Salt and pepper to taste. Thoroughly mix in a blender again. You can also add parsley or basil.
3. Gazpacho is ready!
