Ratatouille

Ingredients


Eggplant 2 pieces
Yellow bell pepper 1 piece
Red bell pepper 1 piece
Onion 1 clove
2 cloves garlic
Tomatoes 2 pieces
Sugar pinch
Olive oil 50 ml
Tomato paste ½ teaspoon
Parsley 10 g
Salt to taste
Ground black pepper to taste

 

Instructions:

1 finely diced onion and eggplant. Eggplant sprinkle with salt and let them soak a few minutes to let the juice.
2. During this time, clean the peppers and tomatoes from the inside, and the flesh cut into small cubes the same as before the eggplants and onions. Garlic and parsley finely chop.
3. Preheat a frying pan of the olive oil and fry the onion until soft and fold it in a colander.
4. Add a little oil in a frying pan and fry it until soft pre-pressed by excess fluid eggplant cubes. Fried eggplant in a colander recline. Now we have to fry everything in the same oil pepper cubes and discard them too in a colander.
5. Pour the remaining oil in a frying pan and fry the garlic until soft, then add the tomato paste and a pinch of sugar, and then immediately tomatoes. Simmer thirty seconds, then stir all previously fried vegetables and chopped parsley, salt and pepper, then a minute – and remove from heat.
