For the dough:
🔹 450 g flour
🔹 185 g butter
🔹 50g sugar

🔹 1 package (7 grams) active dry yeast
🔹 1 egg yolk
🔹 150g cold milk

For poppy filling:
🔹 200 g poppy

For the nut filling:
🔹 200g peeled and crushed hazelnuts
100 g of sugar 🔹
🔹 2 teaspoons vanilla sugar
🔹 100 grams of milk

For lubricating:

Prepare the filling: Mix the poppy seeds with sugar and vanilla sugar, pour the hot milk and stir to melt the sugar. Allow to cool. In the same way prepare the nut filling.
For the dough: Mix the flour with the yeast and sugar, add salt and mix well. In a bowl with the flour, add the chopped butter, egg yolk and milk and then knead a soft dough. Divide the dough into two parts, wrap each in plastic wrap and leave in the fridge for half an hour.
Remove the chilled dough, sprinkle with flour work surface and roll out the dough into a rectangle 2-3 mm thick. Trim the rough edges with a knife.
Put the dough on an even layer stuffing, before reaching the edges. Fold the opposite short edges of the dough on the filling.
Twist the dough with the filling and roll in along the fork pinned roll.
Cover the baking dish with parchment paper and gently lay the rolls. Lubricate the egg yolk and let cool (but not in the refrigerator) for approximately 45 minutes or until completely dry yolk.
Then whisk the egg whites lightly with a fork, spread rolls and leave to dry for at least 1.5 hours (or overnight).
Heat the oven to 180 ° C and bake the rolls for 20-30 minutes or until the surface is golden brown.
